A passionate culinary leader with extensive experience in five-star, five-diamond hotels and collaborations with James Beard-recognized establishments. 26 + years of crafting innovative dishes and leading successful kitchen teams across the globe.


Chef Anthony Castro's career is a symphony of flavors, continents, and experiences. Ignited by the fiery passion for Southeast Asian cuisine under the tutelage of Chef See at the prestigious Shangri-La Hotel, Anthony's culinary journey began as a flicker, soon to erupt into a lifelong obsession.


But a single culinary tapestry wouldn't sate his insatiable curiosity.  Embarking on a global odyssey as a Chef de Partie with the Star Cruise Line, Anthony immersed himself in a kaleidoscope of traditions, traversing the vast culinary landscapes of Asia, Europe, and America. This whirlwind adventure broadened his horizons and honed his skills like a sculptor chiseling a masterpiece.


Driven by an endless appetite for knowledge, Anthony then joined forces with the illustrious Chef Jan Gundlach at The Peninsula Hotel. Here, he meticulously mastered the art of European techniques, solidifying his culinary foundation. Years of refinement later, the call for new challenges echoed across the oceans. Anthony answered, joining the esteemed Chef Terry Greenhouse, a Culinary Olympic champion, at the helm of the famed Edinburgh Castle in Europe. His journey continued with a prestigious position as Sous Chef at Liverpool's iconic floating hotel.


However, Anthony's culinary odyssey wasn't complete. In 1994, a new chapter unfolded, drawing him to the vibrant shores of America. Throughout the years, he has graced the kitchens of renowned establishments like Trump Hotels, Four Seasons Hotels, JW Marriott, Ritz-Carlton Hotels & Resorts, Renaissance Hotels, and Ocean Reef Club.
