Chef Anthony Castro is a seasoned culinary architect with over two and half decades of crafting exceptional dining experiences. His journey through the world’s most prestigious kitchens has honed his skills into a masterful blend of technique, innovation, and global flavors.
From the opulent halls of five-star, five-diamond hotels to the creative crucible of James Beard-recognized establishments, Chef Castro has left an indelible mark. His career is a testament to unwavering passion and a relentless pursuit of culinary excellence.
Rooted in the fiery heart of Southeast Asian cuisine, Chef Castro's culinary odyssey began under the mentorship of the esteemed Chef See at the Shangri-La Hotel. This early influence ignited a lifelong passion for exploring diverse flavors and cultures.
His culinary education expanded exponentially while serving as Chef de Partie on the Star Cruise Line. This global adventure exposed him to a kaleidoscope of culinary traditions, from the bustling kitchens of Asia to the refined elegance of Europe. The experience was a crucible, forging his versatility and adaptability.
Returning to land, Chef Castro elevated his craft under the tutelage of culinary luminaries. A stint with Chef Jan Gundlach at The Peninsula Hotel honed his European technique, while collaborations with Chef Terry Greenhouse, a Culinary Olympic champion, and a Sous Chef position at Liverpool’s iconic floating hotel further refined his skills.
In 1994, Chef Castro brought his global expertise to the United States, where he has continued to elevate standards at renowned establishments including Trump Hotels, Four Seasons Hotels, JW Marriott, Ritz-Carlton Hotels & Resorts, Renaissance Hotels, and Ocean Reef Club. Each role has been a chapter in a remarkable story, adding new dimensions to his culinary repertoire.
